VIGNOBLES BOLLIET ALEXIS

Alexis Bolliet works with the ancestral Cerdon method (elaborating a Gamay and a 100% Poulsard). Cerdon is a very special semi-dry sparkling rosé. But it also produces «quiet» wines: a Chardonnay / Pinot Grigio white, an orange Chardonnay maceration and a Pinot noir. It intervenes minimally with So2 for the Cerdon. In a little less than 5 ha, in organic agriculture (it has just begun its regulatory certification, but it has been practiced for many years). Its steep vines are completely covered with grass with the aim of maintaining a consistent environment both in the vineyard and in the cellar. Save and limit interventions as much as possible and use natural yeasts.
